Puff Pastry Stromboli

I’ve been trying to be more mindful of what I eat lately, and I’ve been doing pretty well for about three weeks. However, I have been craving something savory and puff pastry-related. After a small amount of searching, I found this recipe for sausage, peppers, and caramelized onion stromboli on Lemony Thyme’s blog, who made this savory dish last year for Groundhog Day. Coincidentally, she also called it “Ground Hog Day” to celebrate all things pork related, seeing as this stromboli recipe includes a whole pound of Italian sausage.

This recipe makes a lot of stuffing. Even after piling the stuffing pretty high on each sheet, I still had about 3/4 cup of filling leftover. I stayed fairly on point with Lemony Thyme’s recipe, although I added about another half cup of shredded cheese to the mix and used a whole box of frozen spinach insteach of 2-3 handfuls of fresh. I think it worked out pretty well; I just had to pull apart the defrosted spinach leaves a bit when adding them to the filling.

Since this recipe made so much, I’ll be bringing leftovers to work for lunch and to share. But, this is definitely a share-worthy dish and perfect for larger parties because the recipe uses both sheets of frozen puff pastry in the box.     Wow, this really looks delicious. I love a good strombolli and I know I would like it even better with puff pastry. Everyone deserves a splurge and this is a really good one.

    Love this, love anything to do with puff pastry sheets… so easy to and quick to use, and they almost always taste delicious. This stuffing seems awesome… will try it out.
