How delicious was this week’s assignment? I’d never had Cornish hen before; although I wasn’t expecting anything spectacular, I did enjoy how all the flavors went together. The spicyness of the sausage, the slight sweetness from the pan-drippings glaze, and the hint of saltiness from the hen itself. However, this will have to be a “sometimes treat” recipe as one Cornish hen set me back $7.00 a pound, so I only bought one. Maybe I’ll try this same stuffing and cooking method with a garden-variety whole chicken…

How big was your hen? It actually looks like a cornish hen is supposed to look. From my memory, they do have a taste all their own. A treat, for sure, and I’m glad you liked it as well.

Looks great! I used to make Cornish hen a lot for “company dinner” in my first apartment. They were quite reasonable then.

I can’t remember the last time I had cornish game hen. It is a real treat, and you can’t go wrong with sausage stuffing!

Looks delicious. The price might explain why I never really ate these when I lived in the US. They are cheap here so we eat them somewhat regularly.

I’m surprised at the variability of price on the hens. I found a 1.5 pound hen for $3. It was on sale this week, but the regular price (or price without the grocery store card) was only $4.50 for the whole bird. Glad you enjoyed it, regardless of the cost.

I haven’t had Cornish Hens in ages. This recipe looks really good. I agree though, at $7/lb. I’d try it on a regular chicken. I know that the game hens have a slightly different flavor, but I’m guessing the star of the show is the stuffing.

It has been years since I made Cornish hens. The family really did not like them. It is a great idea using the stuffing for chicken.

I had very similar sticker shock ($15 for one!), but this was fun, fast and elegant. Yours looks beautiful, and that it was a nice treat!

I remain amazed at how much these little hens cost – and how the prices vary. Mine cost a little over $10 for two. Wish I had noted how big they were. They were not exactly tiny but I was still complaining about the price until I read what some of the other Doristas were shelling out. Ouch. Luckily the meal seems to have been universally enjoyed. That stuffing alone would could have been added to just about any meat for me and I would have loved it 🙂

I’ve cooked these little guys before, but I never found them so wonderful that they were worth the expense. I do think they make a nice presentation. I think I’d also be tempted to try the sausage stuffing with a whole roast chicken. More bang for your buck! 🙂
