Apple-Cinnamon Fruit Bars


I can’t believe it’s taken me two weeks into autumn to bake an apple dessert! Shame on me. I’ve seen several apple recipe posts from my fellow bloggers, but before I try my hand at those, I found this recipe for apple-cinnamon fruit bars from Eating Well. Eating Well gives the option of using ground nuts or oatmeal in the crust and crumble (I used oatmeal) and suggests whole wheat pastry flour (I used regular whole wheat flour instead). Plus, six cups seems like a lot of apples, but it provides the bulk and depth for these bars. Be prepared to wait at least an hour and a half before slicing and enjoying these healthier treats!

1 c. old-fashioned rolled oats, divided
3/4 c. whole-wheat flour
1/2 c. sugar
1/2 tsp. salt
4 tbsp. cold unsalted butter, cut into small pieces
1 large egg
2 tbsp. canola oil
1 tsp. vanilla extract
1/4 tsp. almond extract

6 c. diced peeled apples, divided
1/2 c. apple cider
1/2 c. sugar
1/4 c. cornstarch
1 1/2 tsp. ground cinnamon
1 tsp. vanilla extract

To prepare crust: Combine 3/4 cup oats, whole-wheat flour, sugar, and salt in a food processor; pulse until the oatmeal is finely ground. Add butter; pulse until well incorporated. Whisk egg, oil, 1 teaspoon vanilla and almond extract in a small bowl. With the motor running, add the mixture to the food processor. Process, then pulse, scraping down the sides, if necessary, until the mixture begins to clump, 30 to 45 seconds (it will look crumbly). Measure out 1/2 cup of the mixture and combine in a bowl with the remaining 1/4 cup oats. Set aside for the topping. Preheat oven to 400°F. Generously coat a 9-by-13-inch baking dish with cooking spray.

To prepare fruit filling & assemble bars: Combine 4 cups apples, cider, sugar and cornstarch in a large saucepan. Bring to a simmer over medium heat, stirring constantly, until the mixture is very thick, 4 to 5 minutes. Stir in the remaining 2 cups apples, cinnamon and 1 teaspoon vanilla.
Transfer the dough to the prepared baking dish. Spread evenly and press firmly into the bottom to form a crust. Spread the fruit filling over the crust. Sprinkle the reserved topping over the filling. Bake the bars for 15 minutes. Reduce oven temperature to 350° and bake until the crust and topping are lightly brown, 25 to 30 minutes more. Let cool completely before cutting into bars, at least 1 1/2 hours.

    I have something maybe you can help me with. I found this recipe that I am dying to try but it calls for canned coconut which I cannot find anything. Do you have any advice on where I may find it?

    These bars look very good, I made apple crisp and I love the recipe. The first time I made them I followed the recipe calling for 3 cups of apples sliced and diced.. Had a hard time to find an apple or even taste one. Made it the next day using 6 cups and they were perfect. Yup, perfect apple crisp………..So I need to make these bars. Nice post Andi
