Okay, so Dorie wasn’t kidding when she said to keep careful watch over the boiling milk for the first ten minutes of making this week’s rice pudding. My milk boiled over three times! Each time literally came out of nowhere as I would just turn my head away for a second. Such a mess. Sigh…Other than that, this was a pretty delicious dessert! I served my pudding warm to offset the cool fall temperatures outside. The caramelized apples were a sweet topping, and the vanilla in the pudding was fantastic. I ended up mixing the leftover caramelized apples and rice pudding in the same container so that their flavors could meld even more overnight. I’ll definitely be making this dessert again.
