ffwD: Rice Pudding & Caramel Apples


Okay, so Dorie wasn’t kidding when she said to keep careful watch over the boiling milk for the first ten minutes of making this week’s rice pudding. My milk boiled over three times! Each time literally came out of nowhere as I would just turn my head away for a second. Such a mess. Sigh…Other than that, this was a pretty delicious dessert! I served my pudding warm to offset the cool fall temperatures outside. The caramelized apples were a sweet topping, and the vanilla in the pudding was fantastic. I ended up mixing the leftover caramelized apples and rice pudding in the same container so that their flavors could meld even more overnight. I’ll definitely be making this dessert again.     The secret is not to make this delicious sounding desert when you’re rushed. As soon as I calm down and relax I’ll have the proper frame of mind to watch that milk and cook it oh, so slowly.

    That looks delicious. I do love a good rice pudding. It’s often referred to as “nursery food” in England – “comfort food” in the US, and for good reason!

    Your Post actually made me feel better about this week’s recipe. My milk only boiled over once. Three times? Ohhhhhh, sorry. I still am trying to clean up the scaled milk.

    Boiled over milk IS such a mess! I was lucky this time… We really enjoyed this recipe. I started to mix my apples and pudding together but Gary wants to be able to nibble on the plain pudding. Good luck with your clean up!

    Uggh to the boiled mess clean up but yeah for my idea of best comfort food, rice pudding. Love your idea of mixing the caramel apples to it.

    Stove top rice pudding is the best, Yummy. I’ve given up making it on an electric stove because I can never regulate it fast enough to avoid the boiled milk “syndrome.”

    Yep, this one required a lot of hand holding. I watched mine like a hawk and it didn’t boil over. It’s a recipe which really ties you to the stove. Maybe best for a rainy day when you really have absolutely nothing else to do.

    I love rice pudding and caramelized apples are the perfect fall touch. I used to have trouble with the milk when I was making yogurt (I would scald it first) so I know how fast milk can boil over.

    My MIL used to make rice pudding often and I loved it. She served it topped with a little cream but I think I would enjoy your vision with the caramelized apples.

    I did not move from the stove. Since it was late on a Thursday evening, I ended up standing there in heels as I walked in the door from work (after stopping for arborio on the way home).
