Vanilla Buttermilk Pound Cake


After getting back from vacation, I noticed a large stack of “must try” summer recipes that I had piled up on the counter. Not wanting to deal with them or the fact that seasonal fruits and veggies are quickly disappearing, I decided to bake a random pound cake instead! I stayed healthy and chose a throwback recipe from the November 2008 issue of Cooking Light, see here. Though not as dense and lacking a tight crumb found in traditional pound cakes, it was lighter, fluffier, and only mildly sweet. Which is good because I ate a couple of slices with fresh berries.

    I think pound cake deals very well with the fact that seasonal fruits are disappearing! I am buying a bunch of vanilla beans so I may have to try making this with those!

    I usually like the Cooking Light versions of most desserts. As you say, they aren’t perhaps quite as authentic, but you can enjoy them without feeling like you completely overdrew the calorie bank! I must try this. I like the idea of serving with berries!

    That pound cake sure looks delicious, I would want a dollop of whipped cream or a scoop of ice cream with the fresh fruits though.

    Glad you had a good time! This pound cake looks yummy especially with some cherries, berries or sliced peaches. A little scoop of vanilla ice cream would go nicely!

    Oh, I’ve never made pound cake before and this looks yummy. The great thing about pound cake is that you can pretty much use any type of topping for it and it’s delicious either way!
