This week’s assignment, sable breton galette with berries, was a fun dessert to make. How can you go wrong with sweet galette dough that can be easily adapted into cookies, lemon curd, and fresh berries? You can’t really. Each of these three ingredients standing alone would be a fine dessert option in their own right. Putting them together? Now that’s a classy dessert.
Actually, I was planning on making the dough into cookies like Laws of the Kitchen did, and later topping them with the lemon curd and berries. But, I was too distracted by the Miami Heat’s Game 7 championship win and post-game coverage to focus on baking batches of cookies. So, I opted for the one large galette and two mini-galettes that could be baked at the same time. Also, while the dough was chilling, I actually tried my hand at making Dorie’s lemon curd from scratch, which was my first attempt ever. And, it turned out sweet, lemony, and fantastic! I’m glad there’s plenty left so I can play around with it on poundcake or maybe a berry parfait of some type.
