ffwD: Back-of-the-Card Cheese & Olive bread


This week’s assignment was a great “throw together” bread, calling for olive tapenade and a whole mess of shredded Gruyere. The original recipe used chopped whole olives as well, but I omitted those and subbed in bacon bits. This bread ended up extremely savory, so I actually spread strawberry jam on a couple of slices. It tasted pretty good! Even without the jam, the salty slices tasted great by themselves with a glass of Moscato d’Asti. However, the next time I bake this bread, I’ll skip the melted Gruyere on top; it ended up looking like frosting one would see on a pound cake. Somewhat misleading…

    I think the cheese frosting looks excellent, a bit like Marinetti’s Futurist food. I see the cheese and jam dilemma rearing its ugly head once more πŸ™‚

    Bacon, itΒ΄s always a good idea! The texture is very different, and I bet the flavor is better.

    When I saw the picture pop up in my reader I thought the red bits were cherries! I love that you have substituted olives with bacon. The jam must have made it even more awesome. I love sweet and salty combo myself!

    My mom used to make a great ham and cheese bread, so bacon and cheese (and olive tapenade) sounds amazing! I do agree that the cheese on top looks disconcertingly like a glaze.

    This is a fabulous recipe! I must get that recipe! I love the idea of using tapenade…and I wouldn’t need the jam, although the sweet and savory is interesting. πŸ™‚

    I think if you maintain the same proportions, you can add anything to this basic quick loaf. Bacon sounds like a winner. This bread needed a little push, even with the chopped olives, and I think the strawberry jam may be the answer. Just a little sugar rush. I did eliminate the 3/4 tsp. of salt since I was putting in both the tapenade and the oil-cured olives.

    I’m glad you explained the melted gruyere on top…I did think it was frosting! I can imagine that the bacon could only make a good idea better!

    Very odd that they gruyere ended up looking like that. Not what I would have expected at all. I think bacon and bread is some sort of perfect storm for me. I must avoid that. Yes…I must… what?

    Bacon sounds great. I think Dorie said this originally had ham. I kind of like the cheese frosting. It doesn’t look like cheese.
