Unfrosted Vanilla Sugar Cookies


I’ve been slow to post any recipes since my return from Hawaii. I even missed out on today’s Tuesdays with Dorie: Baking with Julia assignment, savarin. However, after seeing so many other bloggers’ great results, I’m going to try my hand at making a savarin this weekend! In the meantime, here’s a recipe for vanilla sugar cookies that was included in one of my Christmas gift cookbooks: Pure Vanilla. The original recipe calls for frosting on top, but I left them unfrosted as I made these as a present for my sister who does not care for the frosting on sugar cookies. The entire recipe is included below.

Big, Soft Frosted Vanilla Sugar Cookies
(adapted from Pure Vanilla)

3.5 c. cake flour
1/2 tsp. salt
1 tsp. baking powder
1 c. (2 sticks) unsalted butter, room temperature
2 tbsp. pure vanilla extract
1 1/3 c. granulated sugar
1/2 c. vegetable oil
2 large eggs, room temperature
2 tbsp. light corn syrup

Sift flour, salt, and baking powder together in a medium bowl. In the bowl of a stand mixer with paddle attachment, beat butter and vanilla extract until creamy. Add sugar and beat on medium-high speed until light and fluffy, about 2 minutes.

In a small bowl, whisk oil, eggs, and corn syrup until well blended. Reduce mixer to medium-low and beat egg mixture into butter mixture until smooth, light and fluffy. Reduce mixer speed to slow and gradually stir in flour mixture until evenly mixed. Cover bowl with plastic wrap and refrigerate for 2 hours.

When ready to bake, preheat oven to 325 degrees. Prepare baking sheets with parchment paper. Using ice cream scoop, drop dough in 1/4 cup scoops onto baking sheets, 3 per sheet. Bake until cookies are just turning pale golden around the edges, about 15 to 17 minutes, rotating sheets from front to back and top to bottom halfway through baking. Do not overbake. Let cookies cool on sheet for 10 minutes, then transfer to cooling rack.


1 c. (2 sticks) unsalted butter, room temperature
4 c. confectioners sugar
1/4 c. milk
1/8 tsp. salt
2 tsp. vanilla bean paste
1 tsp. pure vanilla extract

Place all ingredients in bowl of stand mixer with paddle attachment. Beat on low speed and gradually increase to medium. Beat until frosting is smooth and creamy, about 1 minute. Frost cooled cookies generously.

    I am sure that it must be hard to get back to the daily grind after a vacation in Hawaii.
    These cookies look like a perfect afternoon snack – and I must say, I would like them best sans frosting also.
