TwD: Baking Almond Biscotti with Julia (Rewind!)


Today’s a Tuesday with Dorie rewind, meaning our assignment was to make a previously assigned recipe that was skipped for whatever reason. I’ll admit I chose an easier recipe because I was short on time: almond biscotti. Actually, the original recipe incorporated hazelnuts, but I had almonds on hand and thought those would work just fine. Plus, I had almond extract in my cupboard to help boost the flavor.

I’ve made cardamom pecan biscotti before using a different recipe, but this recipe was reliable enough. However, since giving up all forms of caffeine, the need for biscotti is pretty minimal in my house. Therefore, I only made 1/4 the recipe and shared them with friends. Don’t get me wrong. This recipe is great in a pinch, but only if you’re really jonesing for biscotti with your tea or coffee.

    I agree with you, Yummy…Since cutting back on caffeine as well, my tastes for certain foods has gone waaaay down. HOWEVER, I’d still chow down on these cute looking biscotti’s but with green tea instead! HA!

    I have just started making biscotti professionally. I made 1200 yesterday for the bakery. So easy to make and tasty. Maybe I will try a pecan cardamon. I made double chocolate and chocolate orange yesterday.

    We’re not big on almond extract in our house, so I’d probably go for the earlier cardamom pecan. But love the idea of a second shot at a missed recipe!

    Oh…these sounds lovely and I just made a big batch of mocha hazelnut biscotti too. Wait, giving up caffeine? hm…but I’m sure these biscotti would still taste wonderful with milk? Or try some tea that has no caffeine. Just a thought. 🙂 How that’s nice of you to share your treats with others.

    Strangely (given my love of pretty much all baked goods) I have never been really fond of biscotti – I think they are too hard/crunchy for my tastes. Nice dipped in Vin Santo though!

    Biscotti! Yum! Try making Rooibos tea brewed like espresso. It is very coffee-like and caffeine free.

    Yum! I used to think I hated biscotti because I DO hate the kind you usually get in cafes…dry and hard enough to break a tooth. But, homemade is so different and so much better, yum! 🙂

    Your biscotti remind me of the ones my MIL used to make with almonds. Every time I would visit her, she would send me home with some of her biscotti…she was such a sweet lady.
