Garden Vegetable Gratin

Despite all the tempting, sugary goodies swirling around this holiday season, I’ve actually been craving the opposite: healthy, savory side dishes. To satisfy my craving, I made a healthier version of scalloped potatoes, or pommes dauphinois as the French call it, by following this recipe. This healthier potato dish was first made during this year’s vegan/vegetarian “no turkey all sides” Thanksgiving. When I made it this time around, I kept the fattiness to a minimum by only making a fourth of the recipe, thus needing only 1/4 cup of fat-free cream as opposed to 1 full cup. This dish is so comforting and tasty that you won’t even miss the lack of Gruyรจre cheese!

    I am with you. All I really crave at Christmas and during times of excess are vegies and savoury lovely things like this. Its a fabulous idea and I can hid some vegetables in there for the finicky

    I absolutely love scalloped potatoes! This looks great! And I think with the sweets part, we just gotta stay away from it to not miss it. Can’t just stop with one! So, good for you!! ๐Ÿ˜€ And yes, I should try to practice what I preach…….. lol

    What a great idea! I make the potato version (with full cream, alas, though from grass-fed cattle) and will have to give this a try. Love recipes that include a variety of vegetables.

    As I’m not much of a baker, I think our holiday food tends to be healthier (sort of) too. Well I wish that I can bake like everyone…but I’m just lazy to learn and bake I guess. I love all kinds of gratin, but mine tends to be not-so-healthy with butter and cream. I like that you keep it healthy!

    I love gratin; I made one with just skimmed milk and cornflour the other day and it was so good! Bet a bit of fat-free cream made this lovely though.

    Wow, a real delicious comfort food! Tried the classic and so much heavier recipe once and it tasted great, but now I definitly prefere your lighter version of this gratin,it tastes yummie!
