Despite all the tempting, sugary goodies swirling around this holiday season, I’ve actually been craving the opposite: healthy, savory side dishes. To satisfy my craving, I made a healthier version of scalloped potatoes, or pommes dauphinois as the French call it, by following this recipe. This healthier potato dish was first made during this year’s vegan/vegetarian “no turkey all sides” Thanksgiving. When I made it this time around, I kept the fattiness to a minimum by only making a fourth of the recipe, thus needing only 1/4 cup of fat-free cream as opposed to 1 full cup. This dish is so comforting and tasty that you won’t even miss the lack of Gruyère cheese!
