Adult Grilled Cheese

This past weekend brought much-welcomed cooler temperatures and bright blue skies to Chicago, perfect for outdoor grilling and watching football. However, much to my chagrin, I was unable to fully enjoy the chilled air as I remained cooped up inside my apartment still nursing my sprained ankle.

In strong need for some cheering up, I managed to indulge in a long overdue craving for an “adult grilled cheese” sandwich made with two slices of homemade whole wheat bread slathered with caramelized onions and piled with shredded Gruyere cheese. I got the idea from watching a guy named Jeff Mauro, who hosts a cooking show called Sandwich King. His version was made on sourdough bread.

    So sorry to hear about your sprained ankle and hope it’s better. I’m sure this gooey and delicious looking grilled cheese sandwich helped make things all better…at least while you were eating it!

    This sounds so good! My dearest friend has a broken ankle and has been drinking lots of beef broth to help it heal. Now this is not for you right now, my vegan cleansing friend, but if you are still in recovery when you are done cleansing, it may be a perfect partner to this cheesy sandwich goodness!

    This sounds like great comfort food–and for a reasonable amount of work (unlike Croque Monsieur, the ultimate comfort grilled cheese). Hope your ankle feels better soon.

    Oooh, I know about sprained ankles! While you can enjoy a bit of rest, sometimes enough is enough! Love this grilled sandwich and mostly because it has all I love – the caramelized onions!! Yum!!

    Hope your ankle’s recovered now and you get to enjoy the better weather, it’s so frustrating being stuck inside.
    I used to love toasted cheese sandwiches in my pre-coeliac days and this one looks perfect – the bread looks the best!

    My daughter loves grilled cheese and I make at least twice a week. I usually use panini maker to make them, so it’s faster. I’m TOTALLY making this one. I love Gruyere cheese and I know it goes well with caramelized onions!
