TwD: Nectarine-Upside Down Chiffon Cake

I started the long Labor Day weekend with high hopes, considering Friday marked the end of my vegan cleanse and I would be able to make this week’s TwD assignment without reservation. However, an hour into Friday afternoon I had the misfortune of suffering a wicked fall when I tripped over a manhole cover. It was the worst left ankle pain I’d ever experienced. There was no walking off this pain, and the wincing on my face foreshadowed a weekend of dashed plans. I spent the entire holiday cooped up in my apartment with my left ankle wrapped, iced, and elevated. After three and a half days of that non-stop regimen, I was able to stand long enough to make this cake, but I had no desire to eat it. My ankle still hurts way too much to enjoy any type of food. I’m hoping to be out of this funk in a week and that there will be a slice of this cake left by then.

    That stinks! I hope you’re feeling better soon lady! I’m pretty impressed that you made it and didn’t eat any of it – your ankle must hurt REALLY bad. Let us know when you’re up and around again and eating delicious cakes or we’ll all be worried. Your cake looks beautiful!

    What a nightmare. Cake doesn’t cure an ankle like that. Sleep and a little more sleep with any narcotic help you can get. Don’t stand on it for any length of time. If ever there’s a time for takeaways and ready made food, it’s now. Get friends to bring in good things for you, to add to my good wishes. Bon courage.

    So sorry to hear about your ankle. The advice to stay off it is good: rest, ice, elevation, compression — I have had ankle surgery, ankle sprains and broken feet, so I know what I am talking about. The cake looks gorgeous.

    Oh yummy, that sounds terrible, have you had it checked out / x-rayed? I only ask as I wandered around for a week before I got my shoulder xrayed and discovered I’m fractured it !!

    I’m so sorry to hear about your ankle! I hope you feel better soon. Coincidentally, my younger brother actually sprained his ankle while playing frisbee this weekend and he had to hobble on the first day of school.

    This nectarine upside cake looks so yummy. I love how the cake has that huge honking piece of fruit on top.

    Oh my dear! I’m so sorry to hear. Just speaking from personal experience, get the ankle x-rayed. I fell years ago and wound up able to walk around on it for over two days till my ankle turned many shades of purple and looked like a basketball. Two of the bones had multiple fractures. Please get it looked at. On the other hand if it’s a sprain you need to eat this cake now! And…it looks delicious. Feel better!!

    Ouch! I hope you are on a quick recovery. Rest, ice, compress and elevate (RICE) and if not better soon, then you know what you need to do. Delicious looking upside down anything is on my list. My dad’s favorite cake is upside pineapple cake but this one with the fresh nectarines looks divine. Take Care, BAM

    I agree with Claire, Yummy. You really should get it checked out. Where oh where was that manhole cover anyway!!! Someone should be responsible for things like this. It’s just terrible!!!

    I can just imagine how disappointed you are after spending all that time with your cleanse and now this!!! I A desk once fell on my ankle when I was at an office, yep just toppled. I thought I could shake it off but it fractured a bone which couldn’t be fixed. That was 10 years ago and every now and again it still acts up. Please say you will get it checked, please…

    If there is none of that gorgeous cake left when you are better, I will bake you one myself!!! (just forget about all the times I have told you how I can’t bake though:)

    This past week I read an article about plums being better than nectarines and peaches for desserts. I was appalled! I will certainly be trying this recipe – we should send it into the plum followers and let them know that the nectarine and peach triumph.
