Because of my current vegan cleanse diet, I had to make this dish last weekend. But it was such a hit that I’m still dreaming of those scallops. And the corn with lime dressing. And that grilled peach! I suppose I could make the entire salad again without the scallops, but where’s the fun in that? Anyway, I digress. This very summery salad brought together seasonal fruits and veggies with a simple spicy-lime dressing and basil coulis. However, the next time I make this, I’ll probably add a dusting of cilantro, just to see how it tastes with all the other flavors.

I love the lime dressing. And I think the addition of cilantro would be really good. Such basic ingredients, but when put together it is simple, yet elegant.

I just had grilled peach for the first time at my dinner party yesterday and me too, I fell in love!! It was so delicious. Without blog hopping, I wouldn’t have grilled fruits! I still have scallop in my freezer so I’m going to try cooking on my own – thanks for the idea!

Looks delicious. Since I’m not a scallop lover, food poisoning does that to you, I had to pass but all those other ingredients I would have loved. I hope you will report back on the veggie cleanse. It’s impressive that you’ve stayed on the strict diet.

Although I did not eat these scallops, I would love to try this with shrimp. This

Scallops are one of my absolute favorite things to eat. They are such a treat. I recently made them with a fresh peach and yellow tomato salsa and they were great! I bet this is great, too. All the fresh corn and basil! Perfect for summer.
