The Wilton School

Last Saturday I attended a 1-day class entitled “Basics of Cake Icing and Fillings” at The Wilton School in Darien, Illinois. While most of the classes at The Wilton School are hands-on, this was more of an instructional “watch and learn” type class. The instructor demonstrated how to make apricot filling, chocolate ganache, lemon curd, Italian buttercream, French buttercream, chocolate French buttercream, whipped cream frosting with stabilizer, and white chocolate cream cheese frosting. After the demonstrations, each student was given four store-bought cupcakes to decorate with the fillings and frostings as a take-home bonus. We also received printed recipes, two free frosting tips, and a 25% off discount from the retail store. The instructor herself was very pleasant and knowledgeable. Although the class was simple to me and would be considered easy for most of my blogging friends, it was well organized and professionally done. It definitely strengthened my understanding of frosting basics. If you take a peek at their website, extremely advanced courses are offered with industry-known guest instructors. I wouldn’t mind taking a few more classes myself.

    My daughter took a Wilton class and enjoyed it. We have all the pans etc and I have thought about taking a class also. After seeing your cupcakes, I think I just may have to sign up! They look fantastic and I bet they taste that way too!

    I quite like the idea of lemon curd filling, and i know this is weird but I have always liked those sweet little boxes that fancy cakes come in! They just sing TREAT! c

    I would love a class like this! I feel like I most need just a few pointers, and then I could be more creative on my own! I’m going to look into one in my own area. It never occurred to me look into one quite like this! Yellow cake, lemon curd and sprinkles…oh yes! 🙂 Debra

    I have also attended Wilton’s school of cake fillings and icing but I am not able to use my skill anywhere. My husband does not like any frosting and my daughter only wants chocolate.

    What a great course to do. You should never underestimate the knowledge you can gain from studying the basics. I love the look of all of these cakes but especially the one with the lemon curd. The decoration is stunning. xx

    I’ve taken a few Wilton courses locally and while I’ll never be great at it, it’s great to know that I can put together something that looks pretty good in next to no time at all.

    How pretty!! haha.. I did a 4-hour Wilton class too! It was pretty affordable and I did learn quite a bit about frosting + piping! Yeah! I’d definitely want to take more classes too!! 🙂 Great job on your cupcakes!! They look very nice and professional!

    I attended a wilton class too few months back. It was a disaster, the instructor was the rudest person I have ever met…
    Infact sometime I feel I should write to wilton about my experience so the instructors like her should know how to behave…

    Taking a wilton class has been on my list forever. Many of my friends have taken them and were very pleased.
    I love all the different cake and frostings in yout pictures
