ffwD: Asparagus & Bits of Bacon

I barely had time to squeeze in this week’s recipe before Friday. With my baby nieces in town, any semblance of “grown-up” food is put on the back burner in favor of chicken fingers, fish sticks, and strawberries. I waited until the last possible moment to make the bacon-y green stalks alongside the baked fish my mother made. As suspected, the asparagus/bacon combination tasted delicious. However, I had to nix the walnut oil coating as suggested by Dorie. Instead, I flavored my asparagus with actual walnut bits, which added an earthy flavor and texture.

    That’s a good flavour combination you’ve put together with the bacon bits, but I have to say that I’m a real fan of walnut oil.

    Your photo is great. I have a 15 month old grandson visiting for 2 weeks (with his parents) and I too have been catering to his tastes…chicken nuggets, etc…but he does like asparagus so I lucked out. Fun to have these little ones around.

    Since you’ve started your blog, Yummy, I find I am more willing than before to try new dishes including new takes on sides dishes. This looks SO awesome….but I have to ask…..WHAT KIND OF FISH DID YOUR MOM PREPARE? I know it paired beautifully with it. LOL!     Looks amazing as usual. I do want to try this one again with pieces of nut- I usually do a bacon/onion/pine nut deal with brussel sprouts and need to work it over with the asparagus for the spring. Glad to got to enjoy your nieces- amazing how taste buds change of the years. Nana and I have seen that with my own boys and we are getting a kick out of how much they enjoy “Dorie food”- your nieces time will come too !

    Yummy, A good idea, adding walnuts bits instead of the oil. I personally like my asparagus spears “naked”, without much on top besides lemon or a little oil. And, I prefer roasted (or, grilled) asparagus over blanched or boiled. But, it’s always nice to “dress up” a veggie for a special occasion. Have fun with your nieces – bet the bunny will be stopping by. I enjoy your Blog and am glad to be a relatively new subscriber. Mary

    Did the kids try/like the asparagus? Sounds like a great flavor combo. I don’t eat bacon, but the idea of roasting asparagus with some walnuts, ooo–or almonds!, sounds divine.

    I love asparagus and can’t wait for the new season stuff… I saw some in a farm shop today but it was Β£4 for a small bundle – I’ll have to wait a bit longer πŸ™‚

    I used hazelnut oil (I happened to have some) but I love the idea of using actual walnut bits. The whole dish was pretty soft and I bet they gave it great texture!

    What a good idea to use walnuts instead. I like having odd oils about the house, but they never seem to get used and they are expensive.
