This recipe had been haunting me for months. Every week I would remember it, vow to make it over the weekend, but then life got in the way and the dish never got made. I’m not sure why it took so long, but the likely culprit is that I rarely eat pepperoni so making a special trip just for pepperoni was not in the cards. But, I finally remembered to buy a package of low-fat turkey pepperoni during a random shopping trip, and the resulting dish was quite tasty.
