Quick & Simple Chicken Soup

The other day, I wanted something light and quick for dinner before heading out to a “no food” get together. (I know. Your first thought is, “Why is someone hosting an event with no food?”) Rather than succumbing to a not-so-gratifying peanut butter and jelly sandwich or mac and cheese from the box, I held off for a few more minutes and made this quick soup. It was surprisingly filling and delicious. I was just lucky enough to have some staples well stocked.

INGREDIENTS
2 cups organic chicken broth
1 cup yolk-free egg noodles
1 chicken breast, chopped and seasoned with salt and pepper (or you can use ready-made)
2 handfuls organic baby spinach
1 cup frozen organic green peas

DIRECTIONS
Heat chicken broth to boiling, and then add in noodles and chicken pieces. When noodles and chicken are cooked through, add spinach and peas until everything is tender. Makes two steaming bowlfuls.

    I know the weather has been playing havoc here with its unseasonable mildness but oh my goodness a quick and simple chicken soup sure does look and sound good. I just took chicken out for dinner tonight. Let’s see if I can quench my craving:)

    My kids love chicken noodle soup. I tend to make too big a production out of it so rarely serve it. I will take this as a lesson (my kids will be sooo happy)!
