Forever Nigella–Potato & Mushroom Gratin

I can’t believe it’s already the last week of January! Time has flown by this month, and I wanted to squeeze in my post for this month’s Forever Nigella.

Chicago was hit by another winter storm at the tail end of last week, so there was no way I was braving the wind chill temperatures and blowing snow to pick up groceries. Luckily, I had everything I needed for Nigella’s potato & mushroom gratin, which can be found here or in her Nigella Express cookbook.

I made half the recipe, used skim milk, and added just a bit of chopped up rosemary. This dish was perfect for hunkering down inside and out of the harsh weather.

There’s still time to post for this month’s Forever Nigella. The format’s changed a bit so that each month is a “choose-your-own” theme. See the (very few) rules for participating at the official Forever Nigella page here.

This looks like something I would commit robbery for. I love potatoes in most any fashion but pair them with mushrooms, butter and wine and I’m in heaven. I have to have this soon. πŸ™‚ I don’t plan on wearing the twinset sweater thing when I cook it. I hope that doesn’t affect the flavor. πŸ™‚

That looks truly delicious – very nice pics. We’re still waiting for winter to arrive. This is bad news for the wine industry, as if the frosts come much later the whole crop will be ruined.

Oh yum, this is one of my favorite Nigella recipes, I think I have made it at least a dozen times. Because it’s made with milk instead of cream I rationalize that it is somehow healthy. Well, at least healthier than regular gratin.

To be completely honest, I’m not the hugest fan of Nigella (probably because I’m jealous that even though she has midnight snacks on her TV show all the time, she doesn’t seem to gain any weight. If I tried to do that I’d have to go up a dress size!). But after seeing this gratin? Not only does it look delish, but it’s relatively healthy, since it’s got vegetables in it and all. My opinion of Nigella has been knocked up a couple notches.
