Cinnamon-Apple Cake

After having so much fun baking and cooking in my new kitchen, I was itching to get back in there and try a new, healthy recipe with ingredients I had on hand. After a quick search on, I found a recipe for cinnamon-apple cake, which was perfect since I had Gala apples and fat-free cream cheese that were quickly nearing their “use by” dates.

I must admit that I enjoyed baking with cream cheese. It really gave this cake a pillowy-soft texture and a nice tang to balance out the sweetness from the cinnamon apples.

As you can see from my photos, I didn’t let the cake cool long enough before cutting into it so some of the apples tumbled away from the slice. But, the smell was too enticing to wait!

    Oh YUM this looks moist and amazing! I’ve never really baked with cream cheese, but if the results come out like this, I think I need to start! Plus you can never go wrong with an apple-based dessert.

    Warm cake is the best. I am so happy you broke down and dove in. This Cooking Light Apple cake will definitely get on my “Must Make” list. It looks terribly soft and moist and I do think the cream cheese sounds like a perfect way to tenderize the crumb. Mmmmm…..

    That looks like THE best kind of cake right there! Since I’m not a huge fan of frosting, I love anything with fruit in it to keep it lightly sweet.
