Triple Chip Cookies

That’s butterscotch, mini semi-sweet chocolate, and white chocolate chips to be exact! These sweet little morsels were on sale for $0.75 a bag recently, and since I just happened to have a coupon for $1.25 off three bags, I just had to get a fun assortment.

To be honest, I wasn’t exactly sure what I was going to do with all these chips, but then I found a recipe from Bakerella that combined all three into one cookie. That’s pretty intense! Most of the triple chip cookie recipes I found excluded the butterscotch chips in favor of milk chocolate chips. Plus, those recipes incorporated nuts, which I left out in these.

These cookies were a snap to make. However, to make my chips last longer, I only made half the recipe. And, if you use butterscotch chips, you should really like the smell and taste of them as that flavor seems to be the most dominant amongst the three.

    Love these! My store has put a display of all the different kinds of chips right out in front and i can’t help grabbing bags each time I go in (which is often). Now I have a pretty big collection and have to start using them up!

    what a great idea! i have a base cookie recipe for chocolate chip that I like alot and this is a great one to change things up a bit, but just a few cups of coconut shy of a cowboy cookie! 🙂 … I think I’m going to make them!
