Afternoon Drive Munchies: Oatmeal Chocolate Chip Cookies

Recently, I purchased a 2-lb. container of Quaker Oatmeal for only $1.50! I thought it was a good purchase since I’ve been meaning to eat more oatmeal for breakfast, and I’ve been wanting to bake oatmeal cookies. I played around and made oatmeal chocolate chip cookies instead using a Betty Crocker recipe while incorporating chopped bits of dark and milk chocolate. I was surprised by the lack of cinnamon in the recipe, so I added about a teaspoon of that as well.

The recipe also calls for chopped nuts. My plan was to shell and chop pistachios. However, stirring 2 cups of oatmeal into this batter took a bit more elbow grease than I was expecting, so the pistachios stayed in the bag. I’ll try and remember to buy pre-shelled chopped nuts for next time!

As usual, the recipe made tons more cookies than I could ever dream of eating, so I handed off the majority of cookies to the Afternoon Drive Crew over at 107.5 WGCI! I don’t feel too bad about sharing these cookies because they’re made of oatmeal, so that means they’re automatically healthy! Right?

That Afternoon Drive Crew is one lucky bunch. Automatically healthy – of course. Even healthier if you put nuts in them.

Pistachios would be kick-ass in oatmeal cookies. I never ever see pre-shelled ones, though I dream of them every time I have a recipe calling for pistachios. I hate shelling those buggers. The cookies look great!

Oohh, if you live near a Costco, 10lbs of quaker oats=7.84. I have enough oatmeal to survive an apocalypse. Or make lots and lots of oatmeal cookies. Because oatmeal cookies ARE always healthy and good for you ;D

Like Hannah Montana…these cookies had the best of both worlds!! I too love oatmeal cookies and but to have both milk chocolate and dark chocolate folded in…PERFECTION!
The gang simply scarffed them down-even turning down treats that were brought in. To be fair, Yummy’s Treats are well known and loved around the station but her’s were the first to be devoured. These crispy yet thick cookies were so good in fact, most of us (myself included) left the station with sugar headaches! Haha!

If loving these cookies was wrong…we don’t wanna be right! THANKS AGAIN FOR EVERYTHING YUMMY!! =)

Thank you so much for this post, I’d just like to say that I love to bake!! Sometimes it is not the best result but others it is great. I just happened to make pumpkin chocolate chip cookies tonight. They were so easy too! 1 box quick pumpkin bread…1 can REAL PUMPKIN( not pie filling) and 1 bag of semi sweet chocolate chips! bake at 375 for about 12 mins.. YUMMY and great for Halloween:)
