Ina’s Garden: Fall Family Favorites & Awards!

Awhile back, I purchased a butternut squash from the farmers market for only one dollar. I used part of it to make butternut squash risotto, and now I’m using the other half to make Ina Garten’s roasted butternut squash soup!

As you can see, I didn’t go all out on the garnishes like Ina suggests. Instead, I kept it simple by swirling creme fraiche into the soup and allowed sprinklings of cayenne pepper, cinnamon and nutmeg to colorfully dot the soup. This soup actually turned out rather tasty and sweet, which I’m attributing to the apples. But, it was tasty enough that it might see another rotation in my kitchen this season.     Oh, your soup looks marvelous. I LOVE the creme fraiche as a garnish. Perfect! I would have kept it simple too…it’s so beautiful and delicious as it is.
