Awhile back, I purchased a butternut squash from the farmers market for only one dollar. I used part of it to make butternut squash risotto, and now I’m using the other half to make Ina Garten’s roasted butternut squash soup!
As you can see, I didn’t go all out on the garnishes like Ina suggests. Instead, I kept it simple by swirling creme fraiche into the soup and allowed sprinklings of cayenne pepper, cinnamon and nutmeg to colorfully dot the soup. This soup actually turned out rather tasty and sweet, which I’m attributing to the apples. But, it was tasty enough that it might see another rotation in my kitchen this season. (To see another twist on this great soup, check out Bizzy B. Bakes!)
If you’ve made an Ina dish for this week’s Fall Family Favorites, link up below! Or, if you couldn’t join us this time around, we hope to see you link up on October 20th when the theme will be Autumn’s Bountiful Brunches!
The other was the Hundred Hearts Award from Cooking Varieties.
Thanks so much for these awards! I feel honored every time I receive one, especially from bloggers as great as Cooking Varieties, Simply Reem and Tales of Ambrosia! I highly recommend adding these two blogs to your reading list!
