Afternoon Drive Munchies: Red Velvet Cupcakes!

Because of Labor Day last week, most companies had a shortened work week. This included the Afternoon Drive Crew at 107.5 WGCI. This also meant that they didn’t get any treats. So, I’m making up for that by bringing in these red velvet cupcakes straightaway on Monday!

I knew I couldn’t go wrong by following Martha Stewart’s recipe for both the cupcakes and the cream cheese frosting. And, I’m always amazed by how much powdered sugar is used in cream cheese frosting (a whole pound)! But, they tasted delicious, and I’m a sucker for using red gel food coloring in cakes.

    Those are amazing. I never made cupcakes, I only ate those made by the people around me 😀 I think the next thing on my list is making some cupcakes just the way I want and I think I’m going to choose your recipes, it looks soo tasty. The pictures are so nice!

    I’m always shocked by how much confectioner’s sugar recipes say to put in cream cheese frosting. I prefer it just slightly sweet, so I cut way way back on it. It’s my favorite kind of frosting. I’ve never had a good red velvet cake. Only pre-baked supermarket kind. Those pictures make me want to try my hand at it. Very nice!

    I love afternoon drives. Sometimes I just drive around to get my kids to take an afternoon nap! The cupcakes look devine! I’ve been having a real sweet tooth lately and this picture is not helping it……looks so darn good!

    Ok. I know I’m late with this but these were the BEST cupcakes I’ve EVER tasted! And the frosting…TO. DIE. FOR! Everyone here at the station received a cupcake however, Yummy included an entire ziplock bag of extra frosting so we could all have added goodnees. The only problem is while bringing up the cupcakes, I stuck my finger in the bag of frosting for a little taste. Needless to say, NO ONE got any extra frosting as I had taken it home and found myself mindlessly eating it..with my face INSIDE in the bag. Once embarassment set in and I couldn’t lick the rest of the frosting off my cheeks, I called Yummy to tell her that she should be ashamed of herself. How dare she make such a sinfully rich frosting knowing full well that I’d throw myself into a complete sugar coma?!?!?
    Seriously though….It was like crack in a ziplock bag! =)
