It’s a Monday…

…but feels like a Friday. Ever have that happen? It did to me today, and the feeling was prevalent throughout my office. My boss even commented as such at lunch. Speaking of lunch, my office went out to a Greek restaurant to celebrate said boss’s birthday. Coincidentally, both he and I forgot about this and brought lunch from home. Here’s what I intended to eat: If you couldn’t tell, that’s romaine lettuce with shredded chicken, broccoli, mushrooms, red bell pepper strips, some sort of creamy balsamic vinaigrette, and imitation bacon bits. It was a “make-your-own” salad bar. I had to work with what they gave me. Instead, I had grilled salmon with vegetables and saganaki cheese for an appetizer.

Not one to let a perfectly good salad go to waste, I brought it home to reconstitute into a dinner somehow. I’ve been wanting to make my own flour tortillas ever since I saw Miss Anthropist’s Kitchen do it, so I gave it a whirl! Easy-peasy! I took the salad and reapportioned everything into the wraps. My sister was none the wiser! I also lightly brushed melted Smart Balance over some of the tortillas, sprinkled them with cinnamon sugar, and baked them for a dessert-type snack. Delicious! It turned out to be a pretty decent Monday-that-feels-like Friday after all.

    I’m impressed with the homemade tortillas! I’ve never made them from scratch! I only wish my Monday felt like Friday, I’m so not a Monday person!! Those cinnamonny chips would possibly change that feeling tho!!

    Your tortillas look good! My husband randomly bought a tortilla maker about 5 years back. They were fun and so easy to make, but I haven’t made them since. I blame my laziness. Maybe I will get ambitious soon. πŸ™‚

    I tried to make tortillas once and really it was quite a disaster. I’m happy to pay the $1.99 at Trader Joe’s instead. But yours look fabulous! And so professional.
