Strawberry Upside-Down Cake

Being able to visit my Alma mater last week got me to thinking about the first “magazine” recipe I ever made. I was a senior in college and had just written a paper on the viability of the Martha Stewart Living brand (and Martha Stewart Living Omnimedia) if Martha Stewart, the individual, were no longer the “face” of the company, much like Chanel and Coco Chanel. (This was before the whole obstruction of justice/insider trading prison term.) Of course, this meant reading through several Martha Stewart Living magazines. I, like many others, was entranced by the photos. One in particular was of a blueberry upside-down cake. The cake itself was easy to prepare, and after I pulled the cake out of the oven, I giggled gleefully as I immediately flipped the pan over onto a platter. My sisters and I wasted no time digging into the blueberry cake, and we stopped only to refill our glasses of milk. Obviously, this cake was a success!

Fast forward several years, and I’m thinking about that cake again. However, blueberries are not in season, and I don’t feel like paying $5.00 for a quart of blueberries. So, I used strawberries instead.Upon tasting this cake again, I realized how much I was missing out by not making it more often. Next time, though, I’ll add more brown sugar so that the cake itself is sweeter, just in case I don’t get a bit of the berries. And, I may have to actually invest in a 1-quart souffle dish because there’s not a lot of batter in this cake, and it only makes four servings. But, even in my bread pan the batter spread and rose well. Take this cake recipe for a whirl. I think you’ll enjoy it.

    Argh, strawberry season has come and gone here. But we have blueberries. This looks finger licking good. I know not the tastiest analogy, but I love how moist it is and how it’s juice oozing juice. And the crumb looks moist too.

    We just got some blueberries in our CSA this week and were just informed that strawberry season is done for in this region – so I may just have to go the original route… or pick up some strawberries from the grocery… either way, I know this is going to be fantastic!

    To think, I popped in to let you know You’re Invited to the picnic and You are bringing the letter R. I hope you’ll be tucking the likes of this Strawberry Upside Down Cake into your basket, it looks heavenly! We still have “strawberry vendors” lining our street here in central PA.     I admit that with all my baking, I use strawberries very little, mostly for garnishes. How creative you are to make an upside down-cake sound so good right now and yours stayed so pretty in your cake. And blueberries…you’ve got me thinking. I could justify this for breakfast…like for Father’s Day. Fun and tasty…I think you have helped my menu.

    Oh! Your photos always look so amazing to me. I made a rhubarb upside-down cake today. I’ve never tried strawberries. I think I would have to quadruple the recipe for my ravenous family. 🙂

    Strawberry season is over here and i didn bake once with it and am sad i didnt now 🙂
    ANd we never find fresh blueberries here , i have no choice but to open a tin of them 🙂

    It looks so decadent and delicious! I think the strawberry sounds better than a blueberry upside down cake, like the one you saw in the magazine, cause of the sauciness of the berries.

    I always make pineapple upside down cake and have never thought about creating it with other fruit. Brilliant idea and looks absolutely divine. i think I will definitely be giving this a try!

    I kinda also realize how good strawberry cake is so that aspect makes it seem delicious but it looks funky for sure! Don’t get me wrong though- I think its innovative that you tried strawberry upside down vs. typical pineapple or that blueberry you mentioned.
