Happy Easter!

Lizzy of That skinny chick can bake! and AMInyc of From the bookshelf both tagged me to participate in a game of virtual Easter dinner tag! I’m not actually making anything for Easter dinner and will probably go out to eat. But, I did make the bunny cupcakes!I cheated and used a cake mix but made The Best Frosting I’ve Ever Had recipe from Pioneer Woman. Does it count as healthy if the pastel M&Ms are dark chocolate?

Anyway, for my virtual Easter dinner, I’d serve:

Mozzarella, tomato and basil appetizers
Garlicky crumb-coated broccoli as a veggie side
Potato gratin as a starchy side
Roast chicken as a main course

Strawberry tartlets
And Reine de Saba for dessert!

A final toast with a poinsetta!

I’m not going to “tag” anyone because I’m posting on Easter Day. So, I guess I’ll be “IT” till next year! HAPPY EASTER!

    Are the bunny ears made of gum?

      Yes! The pink ears are those new dessert sugar-free sticks (strawberry shortcake flavor). The blue ears are a basic blue mint stick. I attempted to buy a stick gum that was white with crystals in it to act as the inner lining of the solid ears, but I didn’t want to look like a crazy woman opening packages of gum. =D

    that gratin has my mouth watering! it looks amazing- so perfect!

    also, those cupcakes are the cutest things I have ever seen. I am not sure I could even eat one, they are too pretty!

    I love this fun type of holiday baking…so creative. Yesterday 3 of my grandkids and I spend hours doing Easter kitchen stuff…totally fun and such good memories. Your cupcakes are really cute…I just wish Easter would keep on going for another week…I still have baking to do.
