This week’s TwD assignment was a pretty delicious blueberry nectarine pie. Personally, I was more worried about making the flaky pie dough as I’ve never made pie dough from scratch. However, it was surprisingly simple to assemble and a lot less finicky than I expected. The only issue I had was with my cake pan. The recipe calls for a cake pan with 1-inch sides, and I only own pans with 3-inch sides. This meant that my crust ended up folding over on itself resulting in thicker side edges than normal. The crust itself was plenty flaky with a slight shortbread-like consistency. I definitely wouldn’t mind making this crust again, either with the blueberry and white nectarine filling like this time or with any other fruit filling. Maybe cherry, à la Agent Dale Cooper from Twin Peaks!
