There’s nothing new I can say about these easy and tasty corn pancakes. They were delicious as an appetizer before dinner, and they were satisfying for breakfast with a dollop of creme fraiche and a drizzle of syrup. These tiny golden cakes will definitely make an encore appearance, especially with the novelty of using canned corn amidst the craze of fresh, farmers market veggies in season.

They look lovely and delicious. Hubby and I liked this recipe although I added a little bit of cheese and cayenne pepper to half of the batter just to kick it up a

I like your crispy edges. My pancakes didn’t wow me. I just don’t think you can improve upon a good, basic homemade pancake.

Excellent looking pancakes. Nothing wrong with tinned corn. In this part of France real corn is animal feed – the only corn available for humans is in a can:)

My mom used to make pancakes and stir in corn and it is quite yummy and I like the whole texture experience with the pop of the corn and the pancake. Very nice.

Papa used to make these whenever we had southern fried catfish..they were the next best thing to hushpuppies! Yours looks amazing!!! Papa would have loved your crunchy buttery ends (my fav too!) but would have thought creme fraiche would be “fancy”..haha! =)
