Kat at Housewife Confidential is hosting this month’s Forever Nigella, See Fish and Eat It! She featured Nigella’s quick calamari and served it with her own salsa verde. For my submission, I did a twist on Nigella’s goujons of sole and dill mayonnaise by using catfish instead.
And, I used that fancy Kraft mayonnaise with olive oil as the base for the dipping sauce.
This dish was delicious and quick to prepare, which is exactly what I needed since the past few weeks have been so hectic and exhausting. 
And, for those looking for my friend (Codename: Candelabra), she couldn’t join this month. In the past week, she worked her last shift at her hospital in Georgia, finished her surgical residency, packed up her house, and is en route to Annapolis, Maryland to begin her surgical oncology breast fellowship. Candelabra assures me that the surgeries during her fellowship will be more scheduled, so she’ll be able to join us on a more frequent basis! wow, catfish, that sounds so exotic! I’m not sure we can get catfish over here. Is it like sole? I love the dip, dill is such a great fresh, summer flavour.
