My youngest sister (Codename: DSN Engineer) is graduating from college today! Yay! Since I’m not able to attend the actual ceremony (in Alaska!), I’m making a fun baked good instead. Next month, DSN Engineer will be moving from Alaska to North Carolina for her very first “grown up” job, and I’ll be helping her for a week to get settled. During that time, DSN Engineer has requested that I make several dishes from my blog, and I wanted to throw this recipe in the ring as well.
As many of you know, May is my birthday month, and the sister who lives with me (Codename: Gamer Psychologist) gave me a whole bag of baking “loot” from The Chopping Block, including a new dish, a jar of allspice, and an attachment to place on pots to help pour liquids easier. She also understands my propensity towards baking in individual sizes (like mini cupcakes and individual quiche) that she also bought me four mini loaf pans! Combine that with my love of strawberries and the drop in Chicago’s temperature today, and you get these fun mini strawberry bread loaves:
I found the strawberry bread recipe at Taste and Tell. The recipe makes two large loaves or six small loaves. Since I now own four small loaf pans thanks to Gamer Psychologist, I used the rest of the batter to make a flatter large loaf with some sugar sprinkled on top:

I usually have an issue with releasing my bread from the large loaf pan as well. However, the mini loaf pans aren’t nearly as problematic as a quick slid around the sides with a plastic spatula made them slide out immediately!

Yes, indeed, Congrats to DSN Engineer =) I’m so very Uber proud of her…It’s still very unnerving to know that when she was born, I was in Jr. High and now she is a college grad!! Uggh!
